I've always wanted to roast a chicken. Last weekend Jesse and I went to Barnes and Noble, and while he was looking at gun magazines (haha) I was looking at recipe books. I found a fun story about this no-fail chicken that has amazing effects on men. It's called "Engagement Chicken" and girls who make it for their boyfriends get proposed to in a couple days, there is a serious track record just google it. :)
So I wanted to make this delicous feast for my husband as a "thanks for marrying me" gesture and to see it's magical powers on men in action. It's a simple recipe, baptize the bird with lemon juice, stuff it's cavity with whole lemons and season liberally with salt and pepper. Bake at 400 for 15 minutes breast side down, then decrease heat to 350 and help the chicken onto it's backside. Continue cooking for an hour.
Sounds easy, no? Well, something went wrong. Almost two hours later the stupid foul thing, I mean fowl thing, wasn't cooked! It smelled AMAZING but my new meat thermometer wasn't going any higher than 145.7. And there was red juice coming out of the puncture. So back into the oven he went! I cranked up the heat to 475 and ignored him. And I turned it upside down again for good measure.
Oh, and I should mention that Jesse invited our newly engaged friends over for dinner. I was so afraid that I would poison them and reverse their engagement with the ill-prepared engagement chicken. So, I did what any self-respecting cook would do, I ordered out! Haha, just kidding. I chopped that chicken to pieces and I microwaved it! :) It was good.
Will I ever again try to make a whole chicken again? Probably not. :)
(there was a problem with our oven... only the bottom element works, it's not the chicken's fault)

Maybe it didn't work because the chicken knew you were already married and didn't need an 'engagement chicken'. =\ lol
Funny, Josh married me and I won't come within 10 feet of raw chicken (or any meat for that matter)! You are brave and awesome and funny!
